Make Chocolate Snack Cake

This moist, yummy fudge cake is mixed right in the pan, and can go from start to the table in less than an hour. It also contains no dairy or eggs, so it's a great treat for anyone with allergies to those ingredients. For the same reason, it's also a very inexpensive treat. And, it's vegan, so it's suitable for any and all vegetarians.


Ingredients:

  • 8 by 8 inch Baking pan (or 9 by 9 inch)
  • All purpose flour (not self-rising)
  • White sugar
  • Unsweetened cocoa
  • Baking soda
  • Salt
  • White or cider vinegar
  • Vegetable oil
  • Vanilla (or other) flavoring
  • Water
  • Fork or whisk
Step 1:
Preheat oven to 350 degrees

Step 2:
To dry baking pan, add 1 1/2 cups flour, 1 cup sugar, 3 tbsp. unsweetened cocoa, 1 tsp. baking soda, and 1/2 tsp. salt to baking pan. Combine thoroughly with fork or whisk.

Step 3:
Make 3 hollows in dry ingredients. Add 1 tsp. vanilla to one hollow. Add 3 tbsp. vegetable oil to the second hollow. Add 2 tsp. vinegar to third hollow.

Step 4:
Immediately pour 1 cup room temperature water over all ingredients, and stir well with fork or whisk to combine. There may still be a small streak of flour here or there, or a few small lumps. That's okay.

Step 5:
Quickly put cake in oven. Bake for 25 to 35 minutes, or until cake springs back when gently pressed in the center.

Step 6:
Cool slightly, then serve. You may dust the cake with powdered sugar for decoration, or you can frost it, but it's also great plain. It's also delicious hot served with ice cream.

How To Make Easy Snack to Toddler
Quick easy step to bussy mom.This is a nostalgic dish I used to whip up with two of those four younger sisters I was telling you about. This is a fun one for kids over ten years old--they can help chop, peel and arrange. And because it has fruit, cheese and veg--it's terribly good for them!

Instruction

Step 1:
Slice a few mild cheeses like Monterey jack, Swiss and cheddar, but try at least one "stinky" cheese. A good place to start might be bleu cheese--because you could drizzle some honey over it for added palatability.

Step 2:
Slice (or assign a slicer) Granny Smith apples, oranges, bananas and grapes. Also try either kiwi, mango or pomegranate--at least one fruit which is new to them.

Step 3:
Chop up some broccoli florets, carrots, (not the mini orange thumbs!) radishes, and hearts of palm. The hearts of palm are, obviously, not your run-of-the-mill crudite-platter offering. But kids are usually interested in their salty-sweet soft-crunch. And it expands their horizons!

Step 4:
You could whip up a batch of my famous Green Goddess dressing and dip. Or, if you're lazy, a pre made container of a dill dip.

Step 5:
Choose an arranger and a garnisher, depending on how many kids you're cooking with. Pile everything on one, huge platter and serve with mini plates.


Relevent Tips
Each time you make it, use a different cheese, veg and fruit. Even if they hate it, you're trying something new. Maybe they'll loathe hearts of palm, but they'll be mad for papaya!
