How to Make Vegetarian Chili |
This is a healthy alternative to traditional chili with meat. It is a great way to supplement your diet with more vegetables. You only use one pot, so there is less clean up after you are done with dinner. Read on to learn how to make vegetarian chili.
Instruction
Things you'll Need:
4 tbsp. of olive oil 1 large chopped onion 3 garlic cloves, chopped 1 15 oz. can tomato sauce 1 16 oz. can pinto beans 1 16 oz. can Bush’s Chili Beans (mild) 4 carrots, peeled and cut 1 zucchini, peeled and cut 1 cup frozen green beans 1 cup frozen or fresh corn 1 cup chicken broth 3 fresh tomatoes cut 2 tsp. Cajun seasoning 1 tsp. oregano Salt and pepper (to your taste) Bok choy, chopped into small pieces
Step 1: In a large pot put 4 tbsp. of olive oil, and start to heat.
Step 2: Sautée chopped onion once they are clear, add the garlic.
Step 3: Begin to add the next 11 ingredients to the large pot.
Step 4: Add salt and pepper to your taste. Serve with a little cheese to top the chili.
